This Sunday, starting with the Sunday Baking plan, I chose to do the Easy Apple Cake posted by Bakerella in her blog. I have always loved apple cakes, and this one seemed easy enough to try (and also in the photos looks delicious!!). You can see the original recipe here.
I did half dose of it so the ingredients I used were the following:
1 1/2 cups flour
1 teaspoon baking soda — I increased this compared to the original
1 teaspoon cinnamon — I also increased this by mistake (although I didn’t mind much cause I love cinnamon)
1 cup sugar
3/4 cups oil margarine — I thought oil might make the taste of it more “heavy”
1 teaspoon vanilla
1 1/2 cups diced apples
1 cup chopped dates rolled in flour — didn’t have any
1/2 cup chopped walnuts
brown sugar — didn’t have any
1/4 cup butter
1/8 cup milk
I think something went wrong with the syrup-topping, cause it didn’t really enter much inside the cake and it turned out a bit dry. However it was really tasty and it totally “disappeared” in just two days! Maybe next time I should try adding the topping while the cake is still hot or adding some more liquid ingredients inside the cake, like some milk.
Due to the topping incident, for the moment is “just” a 4. It can be improved in score next time with some adjustments.
