Cheesecake Bars

After the success of last Sunday’s cake, I decided to try something different. I started checking all the food blogs I follow for a good idea, until I got trapped by the photos of the cheesecake bars on Bakerella’s blog. Chocolate + cheesecake = yummy!! So here is my version of this recipe and how it turned out (check the original detailed recipe here):


1 1/2 cups crushed Biscoff Cookies Digestive cookies (was impossible to find Biscoff)
3 Tablespoons packed brown sugar
6 Tablespoons melted butter

3 (225gr.) packages cream cheese, softened
1 cup sugar
2 Tablespoons flour
3 eggs
225 gr. sour cream greek yogurt (most people say this is the best replacement for sour cream)
1 Tablespoon vanilla

Chocolate Ganache
200gr. heavy whipping cream
50gr. butter
200gr. semi-sweet chocolate
1/4 cup confectioners’ sugar


Ok, these pictures kind of suck, it was early on a Monday morning, no good light, not much time for tripod and fancy stuff. Anyway, you get the idea. Now at the important thing, the cheesecake. It turned out really good!! It has a “professional” look, as if you have bought it from a patisserie. The only thing I would change is the amount of the Chocolate ganache topping. I know that for most of us is “more chocolate the better”, but in this case I think that half dose of the ganache would be enough, and would make a lighter dessert, easier to eat (which maybe is a bad thing after all…) and with the cheese taste more noticeable. At least you wouldn’t feel that much guilty for the 500 calories you are consuming in each bite! 🙂


I would give it a 4. Although everyone liked it, they also agreed that there was too much chocolate on top which made the cake a bit “heavy”. But I will definitely do it again!
